Changeover Planner
Two products in a row on one line is either a recipe change or a recipe change plus a sanitation break. The difference is the allergen profile, and it decides how much of the shift you get back. Tick what goes into each product.
How the two cases differ

This sorts a changeover into one of two cases. It does not tell you the cleaning method, the contact time or the verification limit, and it is not a validation: an FDA study of wiping and cleaning in retail food establishments found that surface material and texture both change how well allergens come off, which is why the procedure has to be proven on your own line against your own products. Direction matters and is not symmetrical — running a peanut product after a peanut-free one needs no allergen break, while the reverse does.
